Is that even possible? Can we prepare our families a quick, yet healthy “cuisine” during this quarantine? Absolutely! At our house, our favorite is anything Mexican!! I usually cook up lots of ground beef and season it for tacos, taco salad, and nachos. No cooking for several days! Yay!! I can never tire of Mexican food! Seriously! (Mexican can be healthy if you limit or omit the shells or chips.)
One thing good about quarantine life… I think it's making home-cooked meals popular again! In my opinion, the world could surely benefit from families gathered around the dinner table again.
I don’t know about you, but I’ve never cooked so much in my life! I admit I’ve done my fair share of complaining about being stuck at home, but I tell ya, there is much good to be drawn from this quarantine life. The slower pace of life is rather nice, wouldn’t you agree? To eat a homecooked meal and having everyone sit at the dinner table, and having actual conversations. Let's get back to that! No judgment here, but we have a rule of “no electronics” at the dinner table. Try it!
Here’s my recipe submission: Keto Meatloaf! (We are primarily keto at our house but we do cheat … especially during this quarantine! Gahhh! Gotta jump back on the keto wagon come May 1st!)
Keto Meatloaf
Ingredients:
2 lbs ground beef (80/20 or 85/15 is best)
1 egg
½ cup almond flour
¼ cup heavy cream
2 tbsp Worcestershire sauce
1 tsp garlic powder
1 small onion diced
1 small green pepper diced
1 tsp salt
1 tsp pepper
½ tsp thyme
½ cup grated parmesan
¼ cup sugar-free ketchup
Instructions:
Preheat oven to 350 degrees. In a large bowl, add ground beef, egg, almond flour, cream, Worcestershire sauce, onions, peppers, garlic powder, salt, pepper, thyme, and grated Parmesan. Gently mix together with your hands until the mixture is uniform. Shape mixture into a rectangular loaf and place on a baking sheet lined with aluminum foil. Bake for 40 minutes. Take out of the oven and spread ketchup all over the meatloaf. Return to oven for 15-20 minutes or until the internal temperature is 160 degrees. Let the meatloaf rest for 10 minutes before slicing.
Yum! Meatloaf is such a comfort food! This pairs nicely with your choice of steamed veggies and/or a fresh side salad. Slice it cold the next day for a meatloaf sandwich. Bonus: This is also gluten free!
